Every year in the Napa Valley our highways and roads are flanked by the most beautiful yellow scenery imaginable. Mustard is a cover crop specifically grown in between our vines to help create a healthy soil basis for the next harvest! After Mustard blooms, typically between February and March (some of you may have visited before for the Napa Valley Mustard Festival - always a fun time) the plants are then broken down and reintroduced into the soil, thus adding some very important nutrients, that help keep our soil alive and healthy - I am giving you the "viticulture for dummies version here folks."
